I did a clutch on a 2008 and had the flywheel resurfaced. The clutch operated fine.

Yea, it was actually two people/ two different S197s I served in the USMC with. He TOASTED his clutch and replaced it all with stock(ish) components plus a resurface. The other guy did an upgrade and resurface. Both came out ok.

The one guy learned how to drive stick in his 08. He slipped the clutch constantly to hold the car in place. Takes off at 2k RPM

The other guy blew his up on the track. We installed some FMS cams and tuned it. He did a 4k RPM launch and blew it up. Parts of the disc were falling out as we pulled the trans away from the engine.

How much is being taken off? What will be the new tolerance gap?

I can tell your "friend" has never replaced a clutch before.
He (and you) have been misinformed. It will work just fine.
Make sure you clean up all the crap inside the bell housing and lube all contact points. Clean the clutch contact surfaces with brake parts cleaner. Most clutch kits will give you special lube for the clutch
    splines.... use it.
Check your block alignment pins... they should be in your block, not your bell housing. Small application of grease here helps. Good time to change the transmission lube.
