Default Nova front steering alignment help

I'm finally getting to my 5+ year project and at the point of installing the front suspension. When I disassembled everything I took pics of the upper control arm shims for reference BUT since lost that phone and pics so I have no baseline to start from. Before it gets a professional front alignment how and where do I start? Is there a way to baseline the alignment or just throw some shims in and let the shop take it from there?
The car is actually a 73 Pontiac Ventura with rear steer so 67-69 Camaro/firebird and 68-74 nova are the same stuff with 4 drums single piston caliper

If you put shims in it to get it close or just leave it to the alignment shop to do, it should cost the same either way.
