Buy Category 6 all copper. I like Belden cable, especially the plenum stuff, because it is still flexible even though it is plenum rated. Copper-clad aluminum sucks to run POE over. Pretty much limited to 50' runs or less. I'm not that picky about wire anymore since it's either made in China and you have to find some that doesn't suck or it isn't made in China and it is great.
Buy a Ideal Ratchet Telemaster. Oldschool and works great.
I like Tyco 8J8C ends but there are better ones now.
I like Leviton wallplates and keystones. They also have patch panels that use the same keystones.
I'm torn on patch panels. I have a bunch at home but I don't use them anymore. Which is funny out of a guy that spent millions per year in a datacenter on cabling and infrastructure. Probably because I'm always changing things. When I'm done I'll probably put a patch panel in.
I would consider buying a hardened switch and leave it in the attic.
