Freeze plug would be simple.
If you have the old sensors, using those once modified would work.

That is not the guts of the CVJ, that is a pressed on ABS sensor ring. That is the stem side of the out board joint which has a sealed cup with a stem. The other (boot) side houses the guts, cassette, balls and inner races for the joint.
You can leave it open or cover it, performance will not be impacted either way.
